My double oven comes with a bread-proofing setting in both. It is something I looked for when buying the oven--I only looked at ones with the feature! And having a double oven means I can let dough rise in one while the other preheats. Of course, unless you are buying a new oven, you may not have this option. When I was growing up, my mother used to let dough rise on the radiators. Those aren't very common anymore. What I did before having the luxury of the bread-proof setting was to use my food warmer tray. I put a rack on it first so that the dough bowl was not sitting directly on the warm surface. This worked just fine for many years.
