I always put the dough in the oven (not heated), then slide a 9 x 13 pan of hot water on the rack underneath. Works like a charm, every time. When it's time to bake, while the oven is preheating, I put the ready-to-bake covered dough on top of the stove until it's time to put it in the oven.
