I have a gas oven, so always a little bit warm thanks to the pilot light always burning. I put my dough on the top rack of my oven (cold oven) and then boil some water and put a 13x9 pan on the bottom rack and pour the water into the pan. Steam and heat, works for me every time. Instant 'proof box'.
