My oven has an adjustment on the proofing setting so I can set the temp down to 90F. It maintains the temperature well enough but that is a little warm(but it works). A bonus is that it is a double oven. The proofing option is broken in the lower oven so I proof in the upper, preheat the lower about 30-45 minutes before baking time. There is a large pizza stone in each oven which regulates temperature fluctuations.
