I have a really cold house and no lights in my oven. I didn’t think I could make bread in this house until—I saw a recipe to use the yogurt setting on the Instant Pot for the proofing...and that was a game changer...I use the lowest setting of the yogurt preset...(never wanted to make yogurt!!!) and, a tip, if you do this...use a glass lid instead of the IP top...it doesn’t come to pressure so doesn’t eed it and you can keep an eye on it..I didn’t once and the dough went crazy and started trying to escape through the steam valve and pressure release...what a mess that was!!
