I think people are over-thinking this. Why fret so much about where to rise your dough? Just put the dough where it is warm. Done. No worries My house temp is about 62. I preheat the convection oven to 100, turn it off, and put the dough in it covered with a damp dish towel, Just opening the door reduces the temp. Sometimes I set it by a sunny window or table and in the summer I put it outside and let it rise there. I've been baking breads for years and never had a rising problem. Don't worry about it..just enjoy the great aroma and give yourself a pat on the back for baking home-made bread!
