If you don't mind a slightly sweeter pancake, go ahead and add some malt powder for an old-timey malted milk flavor. It's about half sugar, so keep that in mind when deciding how much to add. I'd recommend adding between 1/4 cup (35g) and 1/3 cup (52g) of malted milk powder to the dry ingredients in the mix and whisk it all together before adding the milk, eggs, and butter/oil. You probably won't need as much syrup to top off your pancakes since the pancakes will be slightly sweeter (and even more delicious). Enjoy! Kye@KAF
