I have another comment. I found that using a docker, one that I bought for making holes in crackers, eliminates any bubbles in the dough. I am sure using the tines of a fork on the crust would have the same effect. I also bake my pizza with no cheese on it at all. When the edges of the parchment begin to turn brown, take the pizza out and add the cheese and put it back in the still-hot oven until the cheese melts to your liking.
