Hi Lucy! You can keep the yeast as is. To keep the dough in the fridge, let it rise on the counter for about 45 minutes after mixing, then keep it covered in the fridge until you're ready to enjoy it. The longer it's in there, it will develop more flavor but it will also rise less and brown less as the sugars are eaten by the yeast. Happy baking! Annabelle@KAF
