Ok, question: When using less cocoa for a lighter 'more subtle' frosting, is that less natural cocoa you are referring to, or less processed cocoa? I wasn't sure from the context if it was still talking about the dutch cocoa or back to regular natural cocoa. My 9 y/o doesn't like rich chocolate frosting (though the 6 y/o does).
