Hi Posie: I've got this site bookmarked but really looked at it today for tips on how to mix together a simple chocolate buttermilk cake recipe. Thanks so much, so far, for the creaming directions. I finally found that med speed on the kitchen aid mixer is 2-3 and I always thought it was 4-5. Also, exactly what softened butter should feel as I have read press your finger into it and if it indents it is ready. But, exactly how indented? Now I know! AND, I always feel the sugar after creaming, but directions always say til light and fluffy. I always thought you shouldn't feel the sugar at all.Now I know you can still feel it a leeeetle bit. I love baking cakes but not being educated enough it is trial and error. I could go on but I won't. Just THANK YOU!
