Making cupcakes ahead, and freezing them to take to a party some distance away. I want to frost them when I get there the night before the party. Can I make ganache at home, refrigerate it, and then whip it into frosting when I am ready to frost the cupcakes? Or can you suggest a better plan? I am thinking of the ganache for its ability to stand up to some heat the day of the party.
