Hi Rick! Parchment is optional. We have a pretty strong love affair with parchment paper and use it for everything without thinking twice! Because of the glaze, it would be really difficult to take the cake out of the pan right after baking so we just serve it right out of the pan. Happy baking! Annabelle@KAF
