I use the Gluten Free Baking mix using the KA "Our recipe for Cinnamon Streusel Coffeecake" (very similar to Blueberry Buckle) with a couple of modifications. For the streusel, I use cold unsalted butter and I add 1/2 cup finely chopped walnuts. For the cake, I add about 3/4 cup blueberries and use melted unsalted butter. Pieces of cake great reheated after being frozen.
