Hi Susan! Durum is a specific strain of wheat. So while we do carry Durum Flour, Semolina Flour, a Pasta Flour Blend, and a Pizza Flour Blend, all of which are either made up entirely of or contain durum wheat, our all-purpose flour is made from hard red winter wheat.
