I am having troubles with my sourdough boule's. They shape nicely for their final rise, but pretty soon the "skin" of the boule starts to tear. I do have them covered with an oiled plastic wrap but they spread out much flatter than they started. The recipe says don't worry, that they will rise in the heat, but they don't. They stay about 2-3 inches thick. Any ideas?
