Hi Linda, PJ didn't test with sour cream because she figured it should work about the same as Greek yogurt. She recommends diluting the yogurt 1:2 with 1% or skim milk. It sounds like your suggested 3:1 ratio of sour cream to water might be a bit on the thick side, but it might work fine.
