A very interesing article but... My wife has many allergies one of which is to milk and milk products. Usually I use rice drink with lemon juice as a substitute. My question - can I use sour dough as a substitute adjusting the flour and liquid components of the recipe as necessary to obtain the sour component? Also, for this to work, do I need to thin the sour dough with either water or rice drink?
