This all sounds good, but I use the buttermilk up by using it in other baked goods that call for milk. I find it to be a good substitute and generally adds a rich flavor. I am sure there are some things it wouldn't work for but biscuit mix biscuits, corn bread, pancake mixes that only call for milk, etc. I think it works great and I get to use up all of that extra buttermilk. Great taste - no waste.
