Rosemary, that's tough! We really like homemade flax egg as our favorite egg replacer in most recipes, and it's incredibly simple once you have the ingredients on hand! We did side-by-side tests in a number of recipes (like banana bread) and found that it was the overall winner in most recipes, although applesauce won out in some fruitier contexts. Happy baking!
