I have been using my homemade yogurt (made with 1% milk) as a substitute for buttermilk for years. I use a 6 oz pot, and if the recipe calls for 1 cup of buttermilk, I just add enough milk to make one cup. I have never had a flop--well, I probably shouldn't say never, because who knows what might happen nex?
