I’m one of those old fogeys who still has regular plain yogurt on hand. I thin it 1:1 with 1% milk in all pancake recipes. I’m not sure it makes a huge difference, but it seems to work. I also keep a canister of powdered buttermilk in the fridge, so when I’m out of yogurt, I use that.
