The buttermilk you'll find in the grocery store is almost always going to be low-fat, so when we refer to "buttermilk" in a recipe without clarifying any further, that's the type we're referring to. If you live near a dairy stand though, you may be able to get your hands on full-fat buttermilk, which is definitely creamier and more flavorful. If you have access to it, it's definitely worth experimenting with adding it to your baking! But since the average person only has low-fat options close to hand, that's what our recipes are designed to use. Happy baking! Kat@KAF
