You're making my mouth water, Sherry! I absolutely love ricotta — both in baking and as a garnish. Our Lemon Pancakes recipe calls for ricotta to make them extra rich and tender, and they also have a whisper of lemon flavor in them too. Serve them with lemon curd and they'd be over the top.
