We can certainly understand that certain breakfast and brunch situations lend themselves to baked pancake squares, as we call them, rather than individual pancakes cooked on a griddle. IF you want to go this route, we recommend following the instructions outlined in our article, Pancake squares. If you'd like to make your pancake squares extra fluffy, follow the tips to use King Arthur All-Purpose Flour, use equal amounts of flour and liquid by volume in the pancake batter, and finally, use 1 egg per cup of flour and whip the egg whites separately.
