Very interesting comments, thank you! Would you be kind enough to share the website with the Tangzhong info you mentioned?

Also I've made the High-fibre sourdough bread recipe by Maurizio Leo at The Perfect Loaf and it was amazing!! The bread wasn't dense and it stayed fresh for days...could easily be made into rolls.
