Question: does the tangzhong slurry get hot enough to kill yeast? If so, could we cook discard starter and then add it to bread without changing the total ratio of active starter:flour:water:salt?
It might do nothing for texture or shelf life, but it could do amazing things to flavor and the available space in my freezer.
