Hi Roberta! It sounds like your bread might be a little over-proofed which is what causes that shrinking effect you're seeing as the bread cools. We'd recommend shortening up your last rise by about 15 minutes and seeing if that prevents the shrinking you've seen with previous loaves of bread. We hope this helps and happy baking! Morgan@KAF
