Hi Deb, the issue with measuring ingredients like flour by cups is that there are so many ways to get the flour into the cup, each of which will yield a different weight. The way we derived the 120g per cup weight for our unbleached all-purpose flour was by using this method to get the flour into the cup, which yields a relatively light cup of flour. The flour weight and the sugar weight are both accurate for this recipe, so if you have a scale I would try to go with the weight measurements and not worry about the cups. If you're ever concerned that we have listed the wrong weight as compared to the cup measurement listed, you can double check our work by consulting our ingredients weight chart, which lists the weight per cup of most of the ingedients we call for in our recipes.
