I'd love some advice on the cupcake version of this recipe.
I made the cupcakes as recommended in the cupcake adaptation page. I beated the eggs and sugar for about 6 minutes with a hand mixer until thick and ribbony.
In the end the cupcakes collapsed a bit and had a wrinkled top and a gummy texture inside. Do you know what the problem is ? I'm thinking the baking powder acted too quickly?
