Hi Michelle! Yes, you can double the recipe. If possible, we'd recommend not using the fan. If it's unavoidable, a low fan will be the way to go and the cake may rise unevenly from the blowing air. Lowering the oven temperature by 25°F is recommend if using convection, and it'll be a good idea to start checking for doneness a few minutes early.
