I have a couple of questions relating to this recipe: 1) can this recipe be easily doubled and 2) can it be baked in a professional bakery oven with the fan on low? I've baked it a couple of times at home in two 9" pans but I need to bake a 10" in a work oven on Wednesday. Can you get back to me please? I'd really appreciate it. Thank you!
