We love the coffee idea, Kerry! For a taller cake, use 8" round pans rather than 9", and make sure your oven is fully preheated. Ovens usually lie when they beep that they're ready so a good 30 to 45 minutes of preheating and an oven thermometer will make sure the oven is thoroughly hot enough to give you a good high rise when the cake goes into the oven.
