I made 30 cupcakes on New Year's Day with the icing. They were wonderful, gone now. The texture was spongy, everything a birthday cake should be. I 1 1/2 times the icing, per comments, but did not need it. I use M1 pastry tip and have plenty of extra icing. As kids we put chocolate icing in between 2 graham crackers. yum. Thank you again for having awesome recipes. I did follow the recipe exactly, but used 1 cup cocoa, not 1 1/2 cup. perfect flavor. Saying that, what do you think about using hot coffee instead of water?
