Hi Lori. Hmm... that is very strange! This cake is quite moist and has a texture somewhere between sponge and pound cake. We've been experiencing some pretty dry weather around here, so it's possible that you may have needed a little extra liquid to make up for the lack of moisture in the air. Either that, or holding back a couple tablespoons of the flour, should help give less dry results. Another common reason cakes can have a dry texture is if they're baked just a little too long, so it's possible they baked quicker than the recipe suggested.
