Mark, thanks for asking this question, because it's a really important one! Yes, there are definitely some changes you'll want to make to this (and to any) recipe at 5500 feet above sea level. Baking time, sugar content, liquid content, baking temperature ... all of these frequently need to be tweaked for our friends who are baking at 3000 feet or higher. Rather than giving you specific instructions for this particular recipe, we'd like to provide guidelines for adapting any recipe, so that you'll have the tools you need beyond this Classic Birthday Cake.
