Hi Michael! Did you mix the shredded cheese into the batter? If so you might be right that the cheese prevented the puff. We recommend pouring your batter into the pan and then topping with cheese, the batter will puff up around the edges and the cheese will melt into to the top. We hope this helps and happy baking!
