I've made toffee for years. My mother made it in the 50's & 60's but she used a local brand of margarine instead of butter. But it worked for her and tasted good. But I use butter and I've only had it fail once when I used a wooden spoon that had been finish rubbed with an oil; it caused the butter to separate which was a mess. I went back to my old reliable wooden spoon and now it always turns out perfectly.
