How does humidity affect toffee? I made it regularly with success in PA but moved to NM where the humidity is much lower and have had no success. Mine separates just as it reaches the correct temperature. I did read the earlier comment related to altitude but our elevation is only 3,800 ft so we aren’t considered high altitude when cooking.
