I was wondering if the brand of butter matters when making candy? I've noticed a difference in butter when baking, so I was wondering the same for candy. What brand of butter do you use?
I see that you said you don't use corn syrup, what do you use in its place? What do you do to offset the problems with humidity when making candy?
