Enriched doughs such as this one have longer kneading times so don't worry too much about over-kneading. You'll know if you've over-kneaded as the dough will start to break down again and go back to being sticky after it's already created a smooth, soft dough. Using the SAF Gold yeast will also help improve the rises which in turn will make for a better texture as well. Each rise period helps to improve the texture of the bread making for a finer interior crumb. With this said, under-proofing the dough can also make for a crumbly final product.
