I also have used a sharp knife for years but I do find that the dental floss creates a more uniform slice with none of the squishing that sometimes happens. As we perfect our recipes, we often then look for ways to perfect the appearance of our baked goods. No it is not needed and it will not change the taste of your delicious creations, but it will create a more uniform cut and you don't have to worry about having that sharp knife.
