Really enjoyed this blog. Gave me the courage to sub vodka for the ice water in my favorite pie crust from the KAF Whole Grains Cookbook...which is a definite improvement in texture... both during rolling out and eating. And I love this filling..although I admit I haven't been brave enough to leave the apples unpeeled, despite making it 3 times so far. I'm a cinnamon lover, but I really like the creamy/vanilla taste/feel of this filling...and how it becomes almost a sauce in and of itself. I used my fav streusel topping..also from the KAF WG Cookbook, no top crust, no caramel sauce...but I think I've now found "my" apple pie. Thanks PJ!
