I think that my mother used to do the same, and I have done so, considered doing that this year. Also, I greatly appreciate the tip that you can make the filling the night before. I will make a crustless custard this year that is best served warm from the oven but want to do early everything that I can. I'll make the mix minus the egg whites, whip them tomorrow, and shoot it in the oven.
