Hi Grandma C.! We don't often see requests for a chewier pumpkin pie filling, so you have us a bit stumped! Adding about a tablespoon of tapioca starch in addition to the starch called for in your pumpkin pie recipe should yield a firmer textured pumpkin pie filling, but probably not something you would consider chewy.
