Barbara, it hasn't collapsed; it's just that the edges have risen around it. Once the pie cools, the edges fall down even with the center to yield a pie that's nearly flat across the top. If your edges rise and stay risen, it may be a sign that you've overbaked your pie somewhat; try baking until the concavity in the center is about 4" across, then remove the pie from the oven.
