Great post. Pumpkin pie is my family's favorite pie and through the years I've learned a lot from the KAF posts. I have had problems with over baking my pies in the past, but now I do as PJ suggests and pull them out when the ring around the edge starts to puff. Also, I always have a little pie dough left over when making my crust so I cut little leaf shapes and bake separately. If I end up with a crack or a blemish, I hide the crack with the little cut outs. And thanks for all of the pie baking posts that have been on the blog for the last couple of weeks... great for this time of the year!
