Pie crust can last in the fridge for two to three days before becoming rubbery and turning gray (oxidizing). If you're going to try to keep your crust in the fridge for more than a single day, consider adding a touch of vinegar to the liquid in your crust. (Find the full details in the article on our blog, Vinegar in pie dough.) It helps keep it from turning gray and also tenderizes the gluten so you end up with a perfectly textured crust.
