Hi Kimberly! It can still be done, the only thing to keep in mind is that gluten-free doughs and baked goods break down in the freezer faster than their gluten-full counterparts. Ideally, you'll want to freeze it for no longer than a week, but a month at maximum. We encourage you to check out our blog article on Gluten-Free Double Pie Crust for some helpful tips.
