Hi Susan! While you could keep a smaller starter, and we do have a blog post about that, you will need to bulk up your starter significantly to make a lot of recipes in our repertoire. Bulking up from just 10g could take 1 or 2 extra feedings to get a stable larger amount of starter so you will just want to build that time in to your planning when making a recipe that calls for significantly more than 10g of starter.
